When did cupcakes become all about the icing? My darling Nanna was well before her time. Perfecting cupcake recipes long before it was trendy to eat them in high heels from a SoHo bakery, Nannas’ cupcakes were deliciously light and fluffy with a hint of lemon. Simply iced, it was the cake that was so special. Our family still laugh about the time my Uncle (as a boy) came home from a birthday party -he was amazed that they served up cupcakes – that were still whole!! As Nanna ran a guesthouse, the only cupcakes they were allowed to eat were the broken ones!!
Still when I make this recipe it takes me back to being a child, sitting in Nanna’s kitchen hoping there would be more than one – but grateful it was whole!

MRS HEG’S CHERISHED CUPCAKE RECIPE
1 1/2 cups sugar
few drops of lemon essence
2 cups self raising flour
1 cup custard powder
1 cup sunshine milk powder
bare 1/2 cup water
Beat eggs and sugar until fluffy.
Add few drops lemon essence
Add butter and beat until white.
Fold in dry ingredients and then mix in water.
drop into patty pans and bake in moderate oven for 15- 20 mins (or when spring back when lightly touched).
